Our guide told us that people thought it was impossible to make such a massive dome, but the wonderful architect Brunelleschi figured out how to do it.

He remains the master because no one else has built a dome this large, ever. This is the biggest masonry dome that has ever existed. Wow! What could Brunelleschi have done with modern technology? It’s hard to imagine.

OK, now it’s time for the Florentine steak, which was definitely the most exciting part of the meal. Not only did we get to eat the steak, we also got to watch the chefs prepare this amazing piece of beef. To be a proper Florentine steak, it has to be a massive T-bone. Like, really massive.

Of course, since we watched the chefs prepare this steak, this meant that we had to wait while it cooked for us. While we were waiting, our guide showed us some videos of an unusual local sporting event called Calcio Storico Fiorentino. It is performed in honor of St. John, the patron saint of the city, and it takes place every June.

I don’t know how to describe the event exactly except that it looks like a mix of soccer, rugby, and wrestling, so I would rather just eat some steak than participate.

Since this is a morning food tour, we’re going to begin with an espresso and pastry. The Italians have known always teased me about swanning around with a giant coffee like Americans often do. In Italy, they like to keep their espresso tiny, and they don’t drink it all day long.

On the tour, you get your choice of pastry, which means you can decide which filling you want. I opted for pistachio because that always seems like a super Italian flavor to me, and I regret nothing.

One food that Italy is famous for is olive oil, so that meant that we had to stop at an olive oil shop. After all, Italians love olive oil so much that they serve bread with it instead of butter, a highly delicious practice. (Please don’t interpret this as me knocking butter.)

At this store, we were able to try several different kinds of olive oil, and I bought a bottle infused with spicy peppers to take home with me. (I got a discount because I was on the tour, but there’s no pressure to buy anything.)

We also learned a bunch of fun facts about olive oil, but the most useful to me is that there isn’t a big difference between virgin and extra virgin olive oil, so feel free to save a little money if you can!

Are you ready for more cow stomach? We had some with our tripe soup on the sunset tour, and now we’ve got lampredotto, which is a sandwich made with a cow’s 4th stomach. (That means it’s not tripe because that’s made with a different cow stomach. Being a cow sounds really complicated.)

I thought this sandwich was delicious especially when it’s slathered in a spicy sauce made with peppers. Also, it’s so good for the environment, comparatively speaking! Don’t waste any part of that cow!

I always get the upgraded drink package of the tour when that’s available. Everyone on the tour got a little wine with the lampredotto, but I had the upgrade, so I had a bigger cup. More wine is always better in Italy, so I felt really good about that decision.
